I came across a posting on another blog for sourdough croissants and decided to give it a try. I was happy with the results.
I really liked how light and flaky they came out. I could really see the layers I built up after baking.
Here is where I found the recipe: sourdough.com/recipes/sourdough-croissant#comment-4863 The only change I had to make was to lower the cooking temp from 400 to 350. Even on a higher shelf, the bottoms browned too much before the tops were brown enough. At 350 it worked fine.
